4 Cocktail Recipes Perfect for a Happy Hour in the Sun

It’s time to sweep up the outdoor areas, dust off the patio furniture and start planning late afternoon barbeques. Whether you’re hosting or attending, a smooth, iced cocktail is sure to be a crowd pleaser. We’ve gussied up some recipes to satisfy all liquor lovers (or try them virgin, if you must) no matter your preference.

1. Gin-Cucumber Lemonade

Ingredients

  • One peeled cucumber
  • ½ cup lemon juice (or to taste)
  • 1 tbsp lemon zest
  • ¾ cup sugar (or to taste)
  • ½ cup gin (or to taste)
  • Cucumber slices and ice to serve

First, chop the peeled cucumber and blend it with 2 cups water and all the sugar. Strain the drink to remove any cucumber remnants. Then add remaining ingredients, and strain again if preferred. Serve on ice, garnished with a cucumber slice. (Serves 5-6.)

2. Whiskey-Blackberry Limeade

Ingredients

  • 3 cups fresh blackberries
  • 6 cups water
  • 1 cup sugar
  • ⅔ cup fresh lime juice
  • ½ cup whiskey
  • Limes and ice to serve

Blend the blackberries and one cup of water until smooth. Strain out the liquid. Add the final ingredients for a boozy-lime finish. Serve on ice, topped with a lime wedge. (Serves 5-6.)

3. Tequila-Cherry Beer ‘Ritas

Ingredients

  • 1 12-ounce can of frozen lime concentrate
  • 12-ounces of cherry soda (any brand)
  • 1 Corona beer
  • 12-ounces of tequila
  • Limes and kosher salt to serve

Coat each glasses’ rim with lime and dip into a plate of salt for a savory lip. In a large carafe stir the remaining ingredients (which are quite potent!). Serve on ice, crowned with a lime wedge. (Serves 8-12.)

4. White Wine Sangria

Ingredients

  • 2 Bottles Pinot Grigio
  • 2 thinly sliced lemons
  • 2 thinly sliced limes
  • 4 tbsp sugar
  • 4 tbsp water
  • 10 mint leaves
  • Ice and Mint leaves to serve

Combine the sugar and water, stir and microwave for 30 seconds to make a sweet simple syrup concoction. Admix the wine and simple syrup in a pitcher, throw in the mint leaves and muddle. Add the delicate lemon and lime slices, mint and serve on ice if desired. (Serves 4.)
